“Hoppy” Welsh Rarebit Day!

Don’t let the title fool you…this recipe is rabbit-free! September 3rd is a national holiday in the USA (yes, you read that right!), National Welsh Rarebit Day. Nobody’s quite sure of the origin of rarebit, but it’s sometimes believed to be a jab at the expense of the early poor of Wales, who may largely have subsisted on rabbit and ale.

Ingredients

  • 350g Mature Cheddar, grated
  • 1 large egg, lightly beaten
  • 2 tbsp milk
  • 1 tsp Worcestershire sauce
  • 1 tsp English mustard
  • pinch cayenne pepper
  • 12 thick slices white (or favorite) bread

Method

  1. Set aside 1 heaped tablespoon of grated cheese. Mix the rest with the egg, milk, Worcestershire sauce, mustard and cayenne.
  2. Preheat the grill to high and toast the bread on both sides. Spread the cheese mixture on top and then sprinkle on the reserved cheese.
  3. Grill until the cheese is melted and starting to turn golden brown. Serve immediately.

**Over 21 Note: For an adult version, substitute 2 tbsp beer (stout recommended) for milk.
