Don’t let the title fool you…this recipe is rabbit-free! September 3rd is a national holiday in the USA (yes, you read that right!), National Welsh Rarebit Day. Nobody’s quite sure of the origin of rarebit, but it’s sometimes believed to be a jab at the expense of the early poor of Wales, who may largely have subsisted on rabbit and ale.
Ingredients
- 350g Mature Cheddar, grated
- 1 large egg, lightly beaten
- 2 tbsp milk
- 1 tsp Worcestershire sauce
- 1 tsp English mustard
- pinch cayenne pepper
- 12 thick slices white (or favorite) bread
Method
- Set aside 1 heaped tablespoon of grated cheese. Mix the rest with the egg, milk, Worcestershire sauce, mustard and cayenne.
- Preheat the grill to high and toast the bread on both sides. Spread the cheese mixture on top and then sprinkle on the reserved cheese.
- Grill until the cheese is melted and starting to turn golden brown. Serve immediately.
**Over 21 Note: For an adult version, substitute 2 tbsp beer (stout recommended) for milk.
