Runeberg tortes are typically eaten only in Finland and are generally available in stores from the beginning of January to Runeberg\u2019s birthday on February 5th; however,&nbsp;<a href=\"https:\/\/en.wikipedia.org\/wiki\/Porvoo\">Porvoo<\/a>, where Runeberg lived for most of his life, is an exception, as some of its caf\u00e9s tortes are available every day of the year. Popular legend says that Runeberg\u2019s wife,&nbsp;<a href=\"https:\/\/en.wikipedia.org\/wiki\/Fredrika_Runeberg\">Fredrika Runeberg<\/a>, created the dessert.<\/p>\n\n\n\n<p><strong>Cake Mixture:<\/strong><\/p>\n\n\n\n<ul><li>\u00bd cup + 1\u2009\u00bd tbsp all-purpose flour<\/li><li>\u00bd cup + 1\u2009\u00bd tbsp crushed gingersnap cookies<\/li><li>6\u2009\u00bd tablespoons almond flour<\/li><li>1\u2009\u00bd teaspoons baking powder<\/li><li>\u00bd cup + 2 tbsp unsalted butter, softened<\/li><li>6\u2009\u00bd tablespoons white sugar<\/li><li>3\u2009\u00bd tablespoons brown sugar<\/li><li>2 large eggs<\/li><li>1\u2009\u00bd teaspoons rum flavored extract<\/li><li>3\u2009\u00bd tablespoons heavy cream<\/li><\/ul>\n\n\n\n<p><strong>Filling:<\/strong><\/p>\n\n\n\n<ul><li>3 tablespoons raspberry jam, or as needed<\/li><\/ul>\n\n\n\n<p><strong>Icing:<\/strong><\/p>\n\n\n\n<ul><li>6\u2009\u00bd tablespoons icing sugar<\/li><li>1 egg white<\/li><\/ul>\n\n\n\n<p><strong>Directions:<\/strong><\/p>\n\n\n\n<ul><li>Preheat the oven to 400 degrees F (200 degrees C). Grease a muffin tin.<\/li><li>Mix flour, crushed gingersnaps, almond flour, and baking powder together in a medium bowl.<\/li><\/ul>\n\n\n\n<ul><li>Beat butter, white sugar, and brown sugar in a separate bowl with an electric mixer until fluffy. Add eggs and beat until thoroughly combined. Mix in rum extract. Add dry ingredients and mix until combined. Add cream and beat until smooth.<\/li><li>Divide cake mixture evenly into the prepared muffin cups. Press a small hole in the middle of each cake and fill with a small amount of jam.<\/li><li>Bake in the preheated oven until tops spring back when lightly pressed, 15 to 20 minutes. Cool in the tin for 5 minutes, then transfer to a wire rack and let cool, about 20 minutes.<\/li><li>Meanwhile, sift icing sugar into a bowl. Add egg white and stir until smooth and shiny.
