Don\u2019t let the title fool you\u2026this recipe is rabbit-free! September 3rd is a national holiday in the USA (yes, you read<\/a> that right!), National Welsh Rarebit Day. Nobody\u2019s quite sure of the origin of\u00a0rarebit<\/em>, but it\u2019s sometimes believed to be a jab at the expense of the early poor of Wales, who may largely have subsisted on rabbit and ale.<\/p>\n\n\n\n

Ingredients<\/h2>\n\n\n\n
  • 350g Mature Cheddar, grated<\/li>
  • 1 large egg, lightly beaten<\/li>
  • 2 tbsp milk<\/li>
  • 1 tsp Worcestershire sauce<\/li>
  • 1 tsp English mustard<\/li>
  • pinch cayenne pepper<\/li>
  • 12 thick slices white (or favorite) bread<\/li><\/ul>\n\n\n\n

    Method<\/h2>\n\n\n\n
    1. Set aside 1 heaped tablespoon of grated cheese. Mix the rest with the egg, milk, Worcestershire sauce, mustard and cayenne.<\/li>
    2. Preheat the grill to high and toast the bread on both sides. Spread the cheese mixture on top and then sprinkle on the reserved cheese.<\/li>
    3. Grill until the cheese is melted and starting to turn golden brown. Serve immediately.<\/li><\/ol>\n\n\n\n
